Vegetarian Cabbage Roll Soup:

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 small green cabbage, chopped
  • 1/2 cup uncooked white rice
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Heat the olive oil: In a large pot over medium heat.
  2. Add the diced onion, carrots, and celery and sauté for about 5 minutes until softened.

  3. Stir in the garlic: Cook for another minute until fragrant.
  4. Add the cabbage: Cook for another 3-4 minutes, stirring occasionally.
  5. Pour in the broth and tomatoes: Add rice, oregano, basil, paprika, salt, and pepper.
  6. Simmer: Bring to a boil, then reduce heat and simmer for 25-30 minutes until rice and cabbage are tender.
