Vegetarian Cabbage Roll Soup:
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 small green cabbage, chopped
- 1/2 cup uncooked white rice
- 1 can (14.5 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Heat the olive oil: In a large pot over medium heat.
- Stir in the garlic: Cook for another minute until fragrant.
- Add the cabbage: Cook for another 3-4 minutes, stirring occasionally.
- Pour in the broth and tomatoes: Add rice, oregano, basil, paprika, salt, and pepper.
- Simmer: Bring to a boil, then reduce heat and simmer for 25-30 minutes until rice and cabbage are tender.
- Adjust seasoning: Taste and adjust as needed.
- Serve: Ladle into bowls and garnish with parsley.
Add the diced onion, carrots, and celery and sauté for about 5 minutes until softened.
