Roux:
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
Vegetables:
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced

- 1 (14.5-ounce) can diced tomatoes
- 4 cups vegetable broth
- 2 cups sliced okra (fresh or frozen)
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 2 bay leaves
- Salt and black pepper to taste
- Cooked white rice for serving
- Sliced green onions and chopped fresh parsley for garnish
Instructions
- Make the Roux: In a large heavy pot or Dutch oven, combine vegetable oil and flour over medium heat. Cook, stirring constantly, for about 20 to 30 minutes until the roux turns a deep chocolate brown.
- Sauté Vegetables: Add diced onion, bell pepper, and celery to the roux. Cook for 5 to 7 minutes until softened. Stir in garlic and cook for another 30 seconds.
- Add Ingredients: Mix in diced tomatoes, vegetable broth, sliced okra, kidney beans, chickpeas, Cajun seasoning, thyme, smoked paprika, cayenne pepper, and bay leaves. Bring to a boil, then simmer on low for 30 to 40 minutes.
- Adjust Seasoning and Serve: Remove bay leaves, adjust seasoning with salt and pepper. Serve hot over cooked white rice, garnished with green onions and parsley.
Notes
- For extra depth of flavor, consider adding chopped mushrooms or diced zucchini.
- This gumbo tastes even better the next day and reheats well.
