For the Filling:
- 2 tablespoons olive oil
- 1 medium yellow onion (diced)
- 2 cloves garlic (minced)
- 2 medium carrots (diced)
- 2 celery stalks (diced)
- 1 cup mushrooms (chopped)
- 1 cup frozen peas
- 1 cup frozen corn
- 1 tablespoon tomato paste
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon paprika
- 2 tablespoons all-purpose flour
- 1 1/2 cups vegetable broth
For the Topping:
- 4 cups mashed potatoes (prepared in advance or fresh)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. In a large skillet, heat olive oil over medium heat. Add onion, garlic, carrots, and celery, and cook for 5–6 minutes until vegetables begin to soften.
- Add mushrooms and cook for another 4–5 minutes until they release their moisture. Stir in tomato paste, soy sauce, thyme, rosemary, and paprika, cooking for 1–2 minutes more.
- Sprinkle in the flour and stir to coat the vegetables. Gradually add vegetable broth, stirring continuously until a thick gravy forms.
- Add peas and corn, stir well, and simmer for another 2–3 minutes. Season with salt and pepper to taste.
- Transfer the vegetable mixture to a baking dish and spread mashed potatoes evenly on top. Use a fork to create texture on the surface.
- Bake for 20–25 minutes, or until the top is golden and filling is bubbling. Let rest for a few minutes before serving.

- For extra richness, add a splash of milk or butter to the mashed potatoes.
