  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small shallot, thinly sliced
  • 1/2 teaspoon freshly ground black pepper
  • 12 green onions, sliced
  • cooked jasmine rice (for serving)

Instructions

  1. Prepare the Sauce: In a small bowl, combine fish sauce, soy sauce, and water; set aside.
  2. Caramelize the Sugar: In a large skillet or wok over medium heat, melt sugar until amber-colored, about 2-3 minutes. Add the fish sauce mixture and stir.
  3. Cook the Shrimp: Add oil, garlic, shallot, and shrimp to the skillet. Cook until shrimp are opaque, about 3-5 minutes.
  4. Finish and Serve: Season with black pepper, add green onions, and serve over jasmine rice.
