- 2 large eggs

- For the glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F and prepare a 12-cup muffin pan.
- Prepare dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- Mix wet ingredients: In another bowl, combine milk, eggs, vanilla, and melted butter.
- Combine wet and dry ingredients: Add wet ingredients to dry ingredients, mix, and fold in diced apples.
- Bake: Divide batter into muffin cups and bake for 18–22 minutes.
- Make the glaze: Whisk together powdered sugar, milk, and vanilla.
- Glaze the fritters: Dip warm fritters in the glaze or drizzle over the top.
- Serve: Enjoy the apple fritters warm.
Notes
- For extra apple flavor, sauté diced apples in butter and brown sugar before adding to batter.
