  • 2 large eggs

Additional:

  • For the glaze:
  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and prepare a 12-cup muffin pan.
  2. Prepare dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Mix wet ingredients: In another bowl, combine milk, eggs, vanilla, and melted butter.
  4. Combine wet and dry ingredients: Add wet ingredients to dry ingredients, mix, and fold in diced apples.
  5. Bake: Divide batter into muffin cups and bake for 18–22 minutes.
  6. Make the glaze: Whisk together powdered sugar, milk, and vanilla.
  7. Glaze the fritters: Dip warm fritters in the glaze or drizzle over the top.
