Water Kefir Grains
- 1/4 cup active water kefir grains
Organic Cane Sugar
- 1/4 cup organic cane sugar
Filtered Water
- 1 quart filtered non-chlorinated water
Optional Ingredients
- 2–3 thin slices of lemon
- 1–2 dried unsulfured figs or raisins
Instructions
- Dissolve Sugar: In a clean glass jar, dissolve the cane sugar in a small amount of warm water.
- Add Water and Grains: Add the remaining water to the jar to make it 1 quart, ensuring it’s at room temperature. Add kefir grains, lemon slices, and dried fruit if desired.
- Ferment: Cover the jar with a breathable cloth and let it ferment at room temperature for 24-48 hours, away from direct sunlight.
- Strain and Store: Strain the kefir, discard fruit, and store the finished kefir in the refrigerator.
Notes
- For a flavored kefir, do a second ferment with fruit juice or herbs for added fizz.
- Use non-metal utensils and filtered water to maintain grain health.
