Description

This Watermelon Feta Salad is a refreshing and light summer dish that combines sweet watermelon, salty feta cheese, and fresh mint. The perfect balance of flavors for a hot day!

Ingredients

Scale

Watermelon Feta Salad:

  • 4 cups seedless watermelon (cubed or balled)
  • 1 cup cucumber (sliced into half moons)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves (chopped or torn)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • Salt and black pepper to taste

Instructions

  1. In a large mixing bowl, gently combine the watermelon, cucumber, feta, and mint.
  2. Drizzle with olive oil and lime juice. Sprinkle with salt and pepper to taste. Toss lightly to coat, being careful not to break up the watermelon or feta too much. Serve immediately or chill for up to 1 hour before serving.

Notes

  • For extra flavor, add thinly sliced red onion or a few kalamata olives.
  • Best served cold and enjoyed the same day for peak freshness.
