Watermelon Feta Salad:
- 4 cups seedless watermelon (cubed or balled)
- 1 cup cucumber (sliced into half moons)
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint leaves (chopped or torn)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lime juice
- Salt and black pepper to taste
Instructions
- In a large mixing bowl, gently combine the watermelon, cucumber, feta, and mint.
Drizzle with olive oil and lime juice. Sprinkle with salt and pepper to taste. Toss lightly to coat, being careful not to break up the watermelon or feta too much. Serve immediately or chill for up to 1 hour before serving.
