  • 4 cups chicken broth

  • 1 cup frozen corn kernels

For Serving:

  • Shredded Monterey Jack or cheddar cheese
  • Sour cream

Instructions

  1. Heat the olive oil: In a large pot, heat the olive oil over medium heat.
  2. Sauté onion and garlic: Add the chopped onion and garlic, sauté until softened, about 5 minutes.
  3. Cook the chicken: Add the diced chicken and cook until no longer pink, about 6-8 minutes.
  4. Add ingredients: Stir in white beans, green chilies, chicken broth, cumin, oregano, chili powder, coriander, salt, and pepper. Bring to a boil, then simmer for 20 minutes.
  5. Finish the chili: Add frozen corn, cook for 5 more minutes. Stir in cilantro and lime juice.
