For the Chili:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 (4 oz) can diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (15 oz) cans white beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • juice of 1 lime
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Saute Aromatics: In a large pot, heat olive oil over medium heat. Cook onion until soft, then add garlic.
  2. Cook Chicken: Add chicken to the pot and cook until browned.
  3. Add Seasonings: Stir in green chilies, cumin, oregano, chili powder, coriander, salt, and pepper.
  4. Simmer: Add white beans and broth. Simmer for 15-20 minutes.
  5. Finish: Stir in sour cream and heavy cream. Simmer for 5 more minutes, then add lime juice.
  6. Serve: Garnish with cilantro and enjoy with tortilla chips or cornbread.

Notes

  • To add heat, include a diced jalapeño with the onions.
