Lasagna Noodles:
- 9 lasagna noodles
White Sauce:
- 2 tablespoons olive oil
- 1 small onion (chopped)
- 3 cloves garlic (minced)
- 1/4 cup all-purpose flour
- 2 ½ cups low-sodium chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Filling:
- 2 cups cooked chicken (shredded)
- 2 cups fresh spinach (chopped)
- 1 ½ cups ricotta cheese
- 1 large egg
- 2 tablespoons chopped fresh parsley
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat and Prepare: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish. Cook lasagna noodles until al dente, then set aside.
- Make White Sauce: Sauté onion and garlic in olive oil, then add flour to make a roux. Gradually whisk in broth, milk, and cream. Season and simmer until thickened.
- Prepare Filling: Mix ricotta cheese, egg, parsley, and salt in a bowl.
- Assemble: Layer noodles, ricotta mixture, chicken, spinach, mozzarella, and white sauce in the baking dish. Repeat for two more layers. Top with Parmesan.
- Bake: Cover with foil and bake for 25 minutes. Uncover and bake for 15 more minutes until golden.
- Rest and Serve: Let the lasagna rest for 10 minutes before serving.
