Lasagna Noodles:

  • 9 lasagna noodles

White Sauce:

  • 2 tablespoons olive oil
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1/4 cup all-purpose flour
  • 2 ½ cups low-sodium chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Filling:

  • 2 cups cooked chicken (shredded)
  • 2 cups fresh spinach (chopped)
  • 1 ½ cups ricotta cheese
  • 1 large egg
  • 2 tablespoons chopped fresh parsley
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat and Prepare: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish. Cook lasagna noodles until al dente, then set aside.
  2. Make White Sauce: Sauté onion and garlic in olive oil, then add flour to make a roux. Gradually whisk in broth, milk, and cream. Season and simmer until thickened.
  3. Prepare Filling: Mix ricotta cheese, egg, parsley, and salt in a bowl.
  4. Assemble: Layer noodles, ricotta mixture, chicken, spinach, mozzarella, and white sauce in the baking dish. Repeat for two more layers. Top with Parmesan.
  5. Bake: Cover with foil and bake for 25 minutes. Uncover and bake for 15 more minutes until golden.
  6. Rest and Serve: Let the lasagna rest for 10 minutes before serving.
