Description

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground chicken or turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 6 cups low-sodium chicken broth
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach (optional)
  • fresh basil or parsley for garnish (optional)

For Topping:

  • 1/2 cup ricotta cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground chicken and cook until browned, breaking it up with a spoon.
  2. Add the diced onion and cook for 3–4 minutes until softened.

  3. Stir in garlic, Italian seasoning, salt, pepper, and red pepper flakes, and cook for another minute.
  4. Pour in the chicken broth and bring to a boil. Add the broken lasagna noodles and cook for 10–12 minutes, or until noodles are tender, stirring occasionally to prevent sticking.
  5. Reduce heat to low and stir in heavy cream, mozzarella, and Parmesan cheese. Stir until melted and creamy. Add spinach, if using, and cook until wilted, about 1–2 minutes.
  6. Ladle soup into bowls and top each with a spoonful of ricotta cheese. Garnish with fresh basil or parsley if desired.

Notes

  • For a richer soup, add extra cream or use whole milk ricotta.
  • The soup thickens as it sits—add a splash of broth or milk when reheating.
