For the Soup:
- 1 tablespoon olive oil
- 1 pound ground chicken or turkey
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 6 cups low-sodium chicken broth
- 8 lasagna noodles, broken into pieces
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups baby spinach (optional)
- fresh basil or parsley for garnish (optional)
For Topping:
- 1/2 cup ricotta cheese
Instructions
- In a large pot, heat olive oil over medium heat. Add ground chicken and cook until browned, breaking it up with a spoon.
- Stir in garlic, Italian seasoning, salt, pepper, and red pepper flakes, and cook for another minute.
- Pour in the chicken broth and bring to a boil. Add the broken lasagna noodles and cook for 10–12 minutes, or until noodles are tender, stirring occasionally to prevent sticking.
- Reduce heat to low and stir in heavy cream, mozzarella, and Parmesan cheese. Stir until melted and creamy. Add spinach, if using, and cook until wilted, about 1–2 minutes.
- Ladle soup into bowls and top each with a spoonful of ricotta cheese. Garnish with fresh basil or parsley if desired.
Add the diced onion and cook for 3–4 minutes until softened.
Notes
- For a richer soup, add extra cream or use whole milk ricotta.
- The soup thickens as it sits—add a splash of broth or milk when reheating.
