Chicken Thighs:
- 2 pounds bone-in, skin-on chicken thighs
Other Ingredients:
- 1 tablespoon olive oil
- 4 cloves garlic (minced)
- 1/2 cup chicken broth
- Juice of 2 lemons
- Zest of 1 lemon
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley (chopped, for garnish)
Instructions
- Season and Sear Chicken: Pat dry the chicken thighs, season with salt, pepper, paprika, thyme, and oregano. Sear in olive oil until browned.
- Mix Sauce: Whisk chicken broth, lemon juice, lemon zest, and garlic in a bowl.
- Cook in Crockpot: Transfer chicken to crockpot, pour sauce over it. Cook on low for 6–7 hours or high for 3–4 hours.
- Serve: Garnish with parsley before serving.
