This Witch’s Cauldron Beef Stew is the perfect hearty and comforting dish for Halloween or any cozy evening. Tender beef, aromatic vegetables, and a flavorful broth come together to create a satisfying meal.

Beef Stew:

  • 2 pounds beef chuck roast, cut into 1 1/2-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 medium carrots, sliced
  • 3 celery stalks, diced
  • 3 medium potatoes, peeled and cubed
  • 2 tablespoons tomato paste
  • 1/4 cup all-purpose flour
  • 6 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 2 bay leaves
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 cup frozen peas
  • Fresh parsley, for garnish

Instructions

  1. Prepare the Beef: Pat beef dry and season with salt and pepper.
  2. Sear the Beef: Heat olive oil in a large Dutch oven or heavy pot. Sear beef cubes until browned, then set aside.
  3. Sauté Vegetables: In the same pot, sauté onion, garlic, carrots, and celery until softened.
  4. Add Flavor: Stir in tomato paste and flour, then pour in beef broth and wine. Return beef to the pot.
  5. Simmer: Add Worcestershire sauce, thyme, rosemary, bay leaves, paprika, and potatoes. Simmer covered for 2-2 1/2 hours.
  6. Finish: Remove bay leaves, add peas, and cook for another 5 minutes. Garnish with parsley.

Notes

  • For a spooky Halloween touch, serve the stew in mini cauldrons or bread bowls.
