Beef Stew:
- 2 pounds beef chuck roast, cut into 1 1/2-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 medium carrots, sliced
- 3 celery stalks, diced
- 3 medium potatoes, peeled and cubed
- 2 tablespoons tomato paste
- 1/4 cup all-purpose flour
- 6 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons Worcestershire sauce
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 2 bay leaves
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 1 cup frozen peas
- Fresh parsley, for garnish
Instructions
- Prepare the Beef: Pat beef dry and season with salt and pepper.
- Sear the Beef: Heat olive oil in a large Dutch oven or heavy pot. Sear beef cubes until browned, then set aside.
- Sauté Vegetables: In the same pot, sauté onion, garlic, carrots, and celery until softened.
- Add Flavor: Stir in tomato paste and flour, then pour in beef broth and wine. Return beef to the pot.
- Simmer: Add Worcestershire sauce, thyme, rosemary, bay leaves, paprika, and potatoes. Simmer covered for 2-2 1/2 hours.
- Finish: Remove bay leaves, add peas, and cook for another 5 minutes. Garnish with parsley.
