Ingredients
Scale
Chicken and Marinade
- 4 boneless, skinless chicken breasts
- 2 tablespoons za’atar spice blend
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 teaspoon salt
- ½ teaspoon black pepper
Garnish
- Fresh parsley, for garnish (optional)
Instructions
- Prepare the Marinade: In a small bowl, mix together the za’atar spice blend, olive oil, minced garlic, lemon juice, salt, and black pepper until well combined.
- Marinate the Chicken: Place the chicken breasts in a shallow dish or a zip-top plastic bag and pour the marinade over them. Ensure each piece is thoroughly coated in the marinade. Refrigerate for at least 30 minutes and up to 2 hours for deeper flavor infusion.
- Preheat Cooking Surface: Heat your grill or a stovetop skillet over medium-high heat to get it ready for cooking the chicken.
- Cook the Chicken: Remove the chicken from the marinade, letting excess drip off. Cook the chicken breasts for about 6-7 minutes on each side, until the meat is cooked through, registers an internal temperature of 165°F (74°C), and develops nice grill marks or a golden crust.
- Rest the Chicken: After cooking, let the chicken rest for a few minutes to allow juices to redistribute, ensuring a juicy bite.
- Serve and Garnish: Slice the chicken if desired and garnish with fresh parsley. Serve hot with your choice of sides.
Notes
- For extra zest, add a drizzle of tahini or serve alongside a lemony yogurt sauce.
- This recipe also works well with bone-in chicken thighs; just increase the cooking time accordingly.
- Za’atar spice blends can vary in saltiness, so taste and adjust the seasoning if necessary before marinating.
- Pair with a simple salad or warm pita bread for a complete and delightful meal.
