Description

Zuppa Toscana is a hearty Italian-American soup featuring Italian sausage, bacon, potatoes, and kale in a creamy broth. This soup is comforting, flavorful, and perfect for a cozy meal.

Ingredients

    Italian Sausage:

    1 pound

    Bacon:

    4 slices (chopped)

    Onion:

    1 medium (diced)

    Garlic:

    3 cloves (minced)

    Chicken Broth:

    4 cups

    Water:

    3 cups

    Potatoes:

4 large russet (thinly sliced or diced)

    Crushed Red Pepper Flakes:

    1 teaspoon (optional)

    Salt and Pepper:

    to taste

    Kale:

    3 cups (chopped, stems removed)

    Heavy Cream:

    1 cup

    Grated Parmesan Cheese:

    for serving

Instructions

  1. Cook Bacon: In a large pot or Dutch oven over medium heat, cook the chopped bacon until crisp. Remove and set aside.
  2. Cook Sausage: Add the Italian sausage to the pot and cook until browned. Drain excess fat.
  3. Sauté Onion and Garlic: Add diced onion and cook until soft. Add garlic and cook until fragrant.
  4. Add Broth and Potatoes: Pour in chicken broth and water. Stir in potatoes and red pepper flakes. Simmer until potatoes are tender.
  5. Finish Soup: Stir in chopped kale, simmer until wilted. Add heavy cream, warm through. Adjust seasoning.
  6. Serve: Serve hot, topped with crispy bacon and Parmesan cheese.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Try turkey sausage and bacon for a leaner option.
  • This soup tastes even better the next day as flavors meld.
